A Tale of Dungeness

Washingtonians eagerly await the highly anticipated Dungeness Crab season each year.  This year happens to be a monster crab year; a year like no other old timers claim.  Here in the Puget Sound we do not experience the frozen Dungeness Crab that so many people around the world are accustom to.  We take this dangerous, feisty creature home from the depths of the sea and boil it in lightly salted water.  Dungeness Crab is like no other crab on earth.  It has a sweet, delicate, almost lobster-like flavor.  It does not require any dressing and the sweetness it imparts does not require it be drenched in fat ladled butter.  All it requires is a cracker and a crab pick.  Of course, a side of boiled Yukon gold potatoes and barely boiled corn on the cob are excellent additions to this tasty, delicate meat.  This is a dish where simplicity shines.
