Smoked Tuna Salad

My husband’s friend gave us a smoked fillet of albacore tuna.  My mind immediately began began churning.  What could I make that would highlight the natural flavor of smoked tuna, keeping the ingredients fresh and simple?  As I pondered what would be the best options for this tasty fillet, I finally settled on a salad.  Chopped romaine, a fresh crunchy cucumber, thinly sliced peppery radishes, the texture of a creamy avocado, dotted with the salty goodness of goat’s milk feta cheese.  The Vinaigrette had a citrus, vinegar tang doted with a distinct cumin flavor.  The salad was crisp, fresh, and light.  It was a perfect mid-summer dinner served with a bowl of fresh, local strawberries.

Smoked Tuna Salad

4 cups romaine, chopped
1 cucumber, quartered and then chopped
4 radishes, thinly sliced
1 avocado, sliced
1 fillet smoked albacore tuna, broken into large chunks
¾ cup feta cheese, crumbled

Lime Parsley Vinaigrette Ingredients

Lime Parsley Vinaigrette

Whisk together in a small bowl:
1 tablespoon fresh lime juice
1 tablespoon red wine vinegar
1/2 tablespoon Dijon mustard
1 teaspoon ground cumin
1/2 teaspoon honey
A pinch or two of salt and cracked pepper
Add in a slow steady stream while whisking:
1/4 cup olive oil

Place romaine, cucumber, and radishes in a large bowl.  Toss with Lime Parsley Vinaigrette.  Place equal portions on plates.  Place avocado, tuna, and feta on salad.  If desired, sprinkle with freshly ground black pepper.
