Jalapeno Bacon Grilled Cheese

Many blogs ago I wrote about how I loved gourmet grilled cheese sandwiches.  Once again, I’ve been experimenting in the kitchen attempting to reinvent this American classic.

So why not go a little more extreme and jump into the spicy cheese arena?  Take the jalapeno popper and dissect it – cream cheese, bacon, cheddar cheese, and of course the jalapeno.  Why wouldn’t this marry well into a delicious grilled cheese?  So I decided to challenge the creation gods.

Jalapeno Bacon Grilled Cheese

Jalapeno Bacon Grilled Cheese
2 slices multi-grain bread
2 slices bacon
1 jalapeno, thinly sliced
1 oz. cream cheese
1 oz. cheddar cheese, grated

In a small skillet over medium heat, cook bacon to your liking.  Drain on paper towels.  Drain excess bacon grease, leaving 1 tsp. remaining in the skillet.  Add the jalapeno slices and saute over medium heat for approximately 5 minutes.  Drain if needed.

Meanwhile, heat a large non-stick skillet.  Spread the cream cheese on one slice of bread, add bacon strips, jalapenos, add cheddar.  Top with remaining slice of bread.  Grill until lightly brown, flip sandwich, and continue grilling until remaining side is lightly brown.
